Sundried Tomato Burgers Topped with
Sauteed Balsamic Onion
1 lb organic ground beef
1/2 cup chopped sundried tomatoes, oil-packed (drained, reserve oil)
1/2 medium onion, minced
3 cloves fresh garlic, minced
1 tbsp dried basil
3/4 tsp ground cumin
1/4 tsp sea salt, plus to taste
1/8 tsp black pepper, plus to taste
1 1/2 medium red onions, halved and sliced thin
1/4 cup balsamic vinegar
1. Mix first 6 ingredients, plus 1/4 tsp salt and 1/8 tsp black pepper, in a large
glass bowl. Cover with plastic wrap and refrigerate at least 1 hour (and up to 4).
2. Prepare grill for cooking over medium-high heat.
3. At stove, place reserved tomato oil in large, heavy skillet over medium-high heat.
Add thinly sliced onions and sauté until soft and starting to brown,
about 5 minutes.
Add balsamic vinegar and sprinkle with sea salt and black pepper.
Simmer until onions are deep brown, stirring occasionally, about 10 minutes.
Remove from heat.
4. Grill burgers until cooked through, about 5 minutes per side.
Arrange on bun or seasonal greens and top with onions.
