
Strawberry Mango Salsa
1 1/2 cups diced, stemmed strawberries
1/2 cup diced mango
1/2 cup diced red bell pepper
1/3 cup diced red onion
1/4 cup roughly chopped cilantro
2 tbsp lime juice
1 tbsp sugar
1/2 tsp salt
2 tsp tequila (optional)
1. In a large bowl, combine all ingredients and stir together gently with
rubber spatula and wooden spoon. Refrigerate, covered, up to 8 hours.
Yield: 3 cups. Analysis per 1/2 cup: 41 calories, 0.5g protein, 0.3g fat,
10.3g carbohydrates
