3 tbsp soy sauce or tamari
2 drops liquid stevia
1 tsp sesame oil
2 tbsp finely chopped ginger
2 tbsp canola oil
4 medium eggplants, quartered lengthwise
4 sprigs cilantro
1. Mix soy sauce, stevia and sesame oil in a small bowl. Fry ginger in a little
of the canola oil until golden brown and add to soy sauce mixture.
2. Drizzle remaining canola oil over eggplant, then grill until tender,
turning to grill evenly.
3. Heat soy sauce mixture through and pour over eggplant. Garnish with cilantro.
