HempNutty Burgers
2 cups cooked or canned black beans
1 cup cooked short-grain brown rice
1/2 cup whole wheat bread crumbs
1/2 cup shelled hempseed
1/4 cup rolled oats
2 tbsp almond butter
2 tsp olive oil (plus 1/2 cup for cooking)
1 small onion, diced
1 tsp poultry seasoning (dried parsley, sage, rose- mary, thyme)
1 tsp sea salt
pinch chili powder
1. Combine first 6 ingredients in large bowl.
2. Place 2 teaspoons of oil in a skillet over medium heat; add onion. When onion
begins to sizzle, add seasonings and sauté for 2-3 minutes. Stir into bean
mixture and mix well.
With moist hands, form into patties.
3. Heat remaining oil in skillet. Fry burgers until golden crisp on the
outside, turning once.
Yield: 6. Analysis per serving: 389 calories, 14g protein, 23g fat (3g saturated),
35g carbohydrates
