Breadmaking Goes Gluten-Free

The Home Bakery Virtuoso Breadmaker from Zojirushi, a nearly century old specialty cookware and small kitchen appliance maker, just hit stores and features a gluten-free setting, allowing those with wheat allergies or gluten intolerances to bake their favorite homemade breads. By altering the kneading and rising cycles, the machine has been fine-tuned to accommodate gluten-free ingredients.

At roughly 2 1/2 hours of baking time, a gluten-free loaf takes about a 1/2 hour longer than a regular dough loaf but nearly an hour less than a comparable wheat loaf, according to a comparison chart in an accompanying instruction manual, whose recipes for gluten-free loafs include brown rice bread, chocolate bread and apple oat bread, among others.
